Thickness of Bergner Argent Triply Wok (Kadai/Kadhai) and Tope (Tasra) :

Both Wok (Kadai) and Tope (Tasra) from Bergner Argent Triply - series are quite heavy and are made of high-quality food-grade stainless steel. Both are thicker at their bottom/base. Thickness gets slightly thinner towards the top of the cookware. This is a wise thing to maintain weight and simultaneously make it convenient for use. Maximum thickness at the base ensures non-sticking of food at the bottom surface while cooking.

  • Sizes come with 18cm(1.3litre), 20cm(1.5 litre), 22cm(2litre), 24cm(2.5litre), 26cm(3.9litre), 32cm(5.8 litre), 36cm(6.1 litre). Roughly 24cm size kadai is suitable for a family of 4 individuals. Different sizes allow you to choose your required size from a good range.
  • Its lid is also made up of stainless steel that retains heat and moisture in the meal better.
  • Requires less oil to cook food. So it provides healthy cooking.
  • Because of its heavy quality food does not stick on its surface, unlike other steel cookware.
  • Unlike an aluminum kadai, it won't absorb oil. You can try a test if you are using aluminum kadai. After cooking and cleaning an aluminum kadai, pour some hot water in it. You may notice traces of oil floating in the water. It proves that the soft metal aluminum absorbs some amount of oil. The strong metal of Bergner steel kadai doesn't absorb oil.
  • It can be used on a gas stove, electric, and induction cooktop.

Use and Tips :
  • You can use it similarly to an aluminum vessel.
  • As compared to an aluminum kadai it requires less oil to cook food but requires more oil as compared to non-stick cookware.
  • To prepare dry dishes like vegetable fry, before cooking, just brush the kadai with a little oil. Keeping the gas flame low (at low temperature in induction) leave the kadai for 3 to 4 minutes. Then start cooking. You will need very little oil to get your vegetables fried well.
  • Cook your food on medium to low flame for long. Actually, this is an ideal and healthy way to cook food. An important thing to follow.
  • While preparing dry dishes with less oil, what I found, after cooking is 70% done, turn off the stove (stop cooking) and leave it for 10 minutes. The rest will be done automatically due to the heat retention in kadai. 
  • For cleaning, sprinkle some water on it, leave it for some time then simply clean it with the help of a scrubber using your regular dishwasher bar/gel. Don’t use any metal scrubber to avoid scratches.
  • You can use metal spatulas also. But what I found, wooden spatulas also work well on it. Then why don't wooden spatulas !! It minimizes scratch on its inner surface.

Cons : 
  • Handles get nominally heated. But in summer while temperature goes above 35-degree Celsius you may need a piece of cloth or such stuff to hold it.
Bergner Argent Tri-ply Stainless Steel Kadai is a fine product at its price. Though this Kadai comes with 5 years warranty. I am sure it will last for decades considering its quality. People say everything gets easily stuck to the surface of steel kadai if used to fry vegetables dry or such. But the high quality and thickness of the kadai won't let anything stick at the bottom of the kadai easily. You won’t face any hassle using it. Overall, it is worth buying steel kadai/wok for everyday use.
