18/10 cookware is a grade of stainless steel. The grade is a parameter to check the quality of steel. One should note the grade of the steel while purchasing a stainless steel cookware. Because poor-quality steel or any other metal may leach into the food when gets heated. Most of the stainless steel dishes and cookware we find in the market don't have the grade mentioned on it. Stainless steel products generally contain chromium and/or nickel metal in some proportion to enhance the quality.  The amount of nickel makes stainless steel dishes stronger, more heat resistant, non-corrosive, gives a fine shine and good finish. But as far as cooking is concerned, stainless steel cookware must have a lesser amount of nickel as compared to chromium that is ideal.
